Phill Grills – A Healthy Kicking Turkey Burger

Having accepted an amazing opportunity to compete (not to come last) at Tough Mudder in 2 1/2 months time, it’s a perfect opportunity for me to get back onto the health kick that helped me lose 18kg. Being a massive carnivore, meat and protein are high on the agenda and less fat, carbs, sugars and articificial additives are my aim. So after watching Parks and Recreation where they make a turkey burger from a whole foods store I wanted to make a Palmer version. As with all cooking, my one rule is that it’s super simple! No 30 minute preps, no huge lists of ingredients just meat and a little bit of magic. Making a burger, it needs to be large to fill me up without the need for chips, it needs to have flavour and it needs to be on the healthy agenda. So this burger ticks all those boxes. Well I hope you think so: What you need:

  • Turkey Mince
  • Ground Black Pepper
  • Cayenne Pepper
  • Bread Rolls
  • Cucumber
  • Spinach
  • Low Fat Mayonaisse
  • 1 Egg
In terms of quantities, it’s all about visuals. We wanted four burgers so we selected a turkey packet this size: Based on the amount of mince you have, add to the mince half the volume of rolled oats and pepper and cayenne to match. Add an Egg and mix together until it all starts to form in a condensed ball. If it’s too sloppy add rolled oats and if it’s too dry add some more egg. If you’ve got a burger maker great, if not roll them into little balls and slowly pat down into burger shapes. Go for width rather than thickness. Get them on a rack and under the grill or if you use an OptiGrill like us, give it a quick spray with something like 1cal. Preheat to get a great sear and when ready slap the bad boys on there! While you’re waiting for the burgers to cook, start prepping your buns. With turkey it needs to be light so cucumber and my favourite spinach are called for. Just to take the edge and add a salty taste, low calorie mayonnaise topped off the burger. See there was no butter as it’s not needed on the rolls. One thing to remember is that these are turkey burgers. It’s a light coloured meat so ensure that it’s properly cooked with either a meat thermometer or cutting into them and ensuring juices run free. As you can see it’s pretty epic and so simple to do. Cleaning up was very easy as it was simple, so there’s literally a massive bowl and the mixing utensils. This was so filling.
